Pierrick Laroche took no time in making a real name for himself as an established Burgundian Winemaker His wines are aged in mainly stainless steel, although he does use some oak for textural purposes. He likes a long élevage as this adds nuance and complexity without the wines being forced or hurried. As a range, they have a lovely mineral core running through them, which keeps them energetic and vivacious. These are top wines, and the exciting bit is that the best is yet to come. The 1er Cru Fourchaume is one of the warmer crus in Chablis, but the natural richness is nicely offset by the vibrancy that Pierrick generates. He has also added a new 1er Cru, Beauroy, from non-estate fruit plus a souped-up Straight Chablis called Chatillon, which has extra dimension and length.
