Domaine Bernard Defaix

When Mother Nature allows, this is a large domaine producing a decent amount of top-quality Chablis. It dates back to 1959 and today is run, organically, by Didier Defaix and his wife Hélène. Based close to Chablis itself, in Milly, Didier crafts the most classical Chablis you can imagine, rich in the fossilised minerality that makes true Chablis’ so great. Oak is used minimally and generally competes with stainless steel for dominance; Didier not wishing to flatten the virile character of his wines. This is a consistently stunning source of Chablis for the purists.
